I totally advocate for the foot-in -the-door technique as more people are receptive to it. I've never used the other technique myself but have seen other activists from my group use it. And yes, it did turn out to be more effective than the foot in the door technique but that was only for some people. Just like you said, in many cities around the world including in mine, it is reduceatarians and flexitarians who hold up the plant-based industry and keep them economically viable rather than full blown vegans.

I've seen so many vegan businesses shut down over the course of the years because they only catered to vegans, while on the other hand restaurants that serve general fare with "vegan options" are thriving and doing better than never before, which is clear indication that the reducetarian method works, and it's going to take a long time before "pure" vegan businesses will be economically viable or profitable catering only to vegan customers.
